Non Pariel Production
What is a non pariel, you might ask? Well, by definition, it is a "flat round candy made of chocolate covered with white sugar sprinkles". In Australia, they're known as "chocolate freckles"because they lick the sprinkles and stick the candy on their skin, which leaves the colored sprinkles on their skin. In the UK, they have many names; "Jazzies, Jazzles, Jazz drops or Snowies" are a few. Here in the US, you may know them as the traditional "Sno-Cap" made by Nestle.
We make our non pariels in house, and when we make them, we make A L O T !
It's a very time consuming project and requires a lot of set up and manpower.
First we start out by shooting small amounts of chocolate onto a sheet pan
covered in the non pariel seeds. This is how they get their unique shape.
They're not perfect circles. However the machine pumps out the chocolate
onto the bed on seeds is how the candy will look.
Next, we give them a few minutes to dry. This happens pretty quickly because they're small. We then scoop the chocolate discs with a "french fry basket" & shake off the excess seeds. They're then transferred the candy to our machine called the "All Fill". The machine is calculated for each product and deposits the correct amount into our cellophane bags.
It's really an amazing tool that we are so grateful to be using. It has made our bagging and packaging much more efficient. Next the candy is heat sealed. This insures the product will remain fresh. The heat sealer works in 3 seconds, which is pretty incredible! We simply step on a pedal that clamps the bag down and it's sealed.
Last but not least, we trim the bag, put our ingredient label & price tag on, and pack them into a box.
